Seared To Perfection: Taste The Richness Of Black Cod Done Right!

Ingredients:
1 tablespoon of olive oil
black cod fish cut into 3-4 individual filets
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
Ingredients for the wine braised tomatoes:
grape tomatoes
1/2 small shallot thinly sliced
1 garlic clove minced
1 cup dry white wine
1/4 cup chicken broth
1 tablespoon fresh thyme minced
Method:
Rinse each piece of fish under cold water, then gently pat dry with a paper towel to remove excess moisture. Season both sides with salt, black pepper, and garlic powder. If time permits, let the fish fillets sit at room temperature for about 20 minutes.
In a large nonstick skillet, heat 2 teaspoons of avocado oil over medium-high heat. Once the oil is hot, place the fish fillets in the skillet, skin-side down. Sear for 4-5 minutes, until the skin is crispy and golden brown. Carefully flip the fillets and sear the fleshy side for an additional 2-3 minutes. Once cooked, remove the fish from the skillet and let it rest on a plate.
Stir in the garlic and sauté for another 30 seconds, being careful not to let it burn. If the garlic starts to brown, quickly move on to the next step. Pour in white wine and chicken broth, scraping the bottom of the pan again to loosen any stuck bits. Allow the mixture to come to a simmer, then let it simmer for 5-7 minutes, or until the sauce has reduced by at least half and the tomatoes are wilted. Add fresh herbs just before serving.
To serve, you can either pour the grape tomatoes and white wine reduction directly over the fish or serve them alongside. If you choose to serve the tomatoes on the side, spoon some of the white wine sauce over the fish for added flavor.
Notes:
If fresh thyme isn't available, you can substitute it with 1 teaspoon of dried thyme. Fresh basil, rosemary, or Italian parsley are also excellent alternatives.
Feel free to incorporate additional vegetables such as mushrooms, fresh spinach, or arugula alongside the tomatoes.
For an extra burst of flavor, consider adding lemon zest and fresh green onions from your garden toward the end of cooking.
