Rib Prime On BBQ With Shallot Sauce

  • 2 Rib Prime De La Valley (~1kg per piece)
  • 4 Shallot
  • 50 cl of Red Wine
  • 20 cl of Beef Broth
  • 40g of Butter
  • Salt
  • Pepper


Step 1: Take your Rib Steak out of the fridge (at least 1 hour before cooking)

Step 2: Peel and chopp you shallots then cook them with a touch of butter in a medium heat pan

Step 3: When almost caramelized, deglaze your shallots with the red wine and reduce by half before adding the beef broth. Reduce again until the sauce is unctuous

Step 4: Turn off the heat, add the rest of the butter to your sauce and mix 

Step 5: Heat your BBQ to high temperature and sear your steaks (3 minutes each side). 

Step 6: Low the heat to medium and let your Rib Prime Steaks cook for 10 to 12 minutes on each side depending on your desired cooking

Step 7: After cooking, let your Rib Prime Steaks rest for 5 minutes. Cut thin slices (1 to 2 cm) and serve toped with your sauce.
