Now, De La Valley announces the expansion of its stellar beef offerings to include premium French Charolais Genisse Beef. Characterized by its impressive size and majestic cream coat, the Charolais is a French bovine breed originating from the region of Charolles in Burgundy, France. Its muscular physique allows for the production of low-fat and extremely tasty meat that is revered among meat connoisseurs. At De La Valley’s partner farms in eastern France, a few dozen heifers are selected for their excellent conformation, strong shape and the highest state of well- being. After selection, De La Valley’s animals are fed on cereals for 90 days, developing harmoniously until the age of 30 months. Their meat is thus enriched with a fine fat, which penetrates the muscles and gives an unparalleled flavor.
For a taste of the exclusive French Charolais Genisse beef, guests can shop online with De La Valley, or visit one of the restaurants or hotels that is currently supplied with the product. Available at the online shop, one of the signature cuts includes a 1.2kg French Tomahawk (priced at HK$550 per kg) that is beautifully marbled, tender and extremely flavorful. The 1kg French T-Bone (priced at HK$479 per kg) is characterized by its subtle marbling and an elegant “beefy” flavor derived from the moisture of the T-shaped bone. The final signature offering is the Steak Tartare using Charolais Beef from France (priced at HK$53.80 per 180g), where the premium beef is freshly hand-minced by knife.
Italian restaurant Giando, by Chef Gianni Caprioli, lets guests savor the truest flavors of Charolais beef by serving it raw as a tartare, with cold broth and oscietra caviar (HK$278). Hong Kong’s seafood specialist, Fishsteria Seafood Place has also opted to serve the beef as a classic tartare, making it shine with caper berries, shallots, Tabasco, Worcester sauce, thyme-Dijon mustard, char- grilled onion and hand-cut potato crisps (HK$148). Le Bistro Winebeast, the beloved rustic French bistro by chef Johan Ducroquet, serves the Charolais as a 130g beef tartare with sweet potato crackers (HK$168).
