Cooking expert tips

As all MASSIVE piece of meat, De La Valley's Tomahawk will require time to get a proper juicy cook. We thus recommand you to use a BBQ in order to obtain the best results: 

BBQ Cooking:
Step 1: Take your Grass-Fed Angus Tomahawk out of the vacuum pack, dry it with paper towel and let it rest for at least 20min in order to allow it to come to room temparature.
Step 2: Pre-heat the BBQ and in the meantime, season your steak with salt (sea salt recommended) and black pepper.
Step 3: Sear the steak on all sides, including the thick edge.
Step 4: Lower the temperature to low/medium, close the hood and cook for 12 mins each side.
Step 5: Take your Tomahawk out of the BBQ and let rest in a warm place covered loosely with foil for 15 minutes. 
Step 6: With a well sharpened knife, sperate the meat from the bone and then cut slices of 2 cm wide. ENJOY!

Roasted Spring Chicken Cooking:

Step 1: Take out your spring chicken from freezer at least 4 hours before cooking in order to bring it to room temperature

Step 2:  Preheat oven to 425 degrees F . 

Step 3:  Add butter to a medium sized bowl. Add in olive oil, rosemary, garlic and lemon zest. Stir to combine. Set aside.

Step 4: Generously season chicken with salt and pepper, including inside of the cavity.

Step 5: Brush the butter mixture onto the chicken generously covering up all of the chicken. Squeeze the juice of 2 lemons all over the chicken. Stuff the chicken with lemon slices, rosemary and onions.

Step 6: Place chicken in roasting pan and cook for 45 minutes then baste. 

Step 7: Return to oven and cook for another 15 minutes or until golden. Lightly tent with foil if chicken is browning too quickly. Rest for 15 minute before carving.ENJOY!

Roasted Chicken Mid-Joint Wings in Cooking:

Step 1: Take out your chicken from freezer at least 4 hours before cooking in order to bring it to room temperature

Step 2:  Preheat oven to 425°

Step 3:  In a Ziploc bag or mixing bowl, combine OLIVE OIL, PAPRIKA, GARLIC POWDER, SALT, and PEPPER; add CHICKEN WINGS; massage oil and seasonings into chicken surface until well-coated.

Step 4: Refrigerate the chicken in the marinade for at least 30 minutes.  For best flavor allow the chicken to marinate for 2 to 12 hours.

Step 5: Bake 25-30 minutes; carefully remove from oven and insert meat thermometer into center, alongside the bone to confirm temperature of 165°, continue baking in 5-10 minutes intervals, if needed.

Step 6: Serve warm before serve.
